Sunflower Halva Bites with Cranberries

Five ingredient, super simple, delicious, gluten-free bites are great for satisfying sugar cravings in a healthier way. Once made, they can be stored in a fridge for up to five days and make a great quick snack for whenever you need an energy boost.

300g sunflower seeds

120ml maple syrup

2tbs tahini

75g cranberries

Pinch of salt

Toast the sunflower seeds on a hot and dry pan for a couple of minutes until they have a nutty aroma and begin to look light golden brown. Once ready, put aside and let them cool. Next, grind in a blender or nut chopper.

Put the ground sunflower seeds into a bowl, add the maple syrup, tahini, cranberries and salt and mix the whole thing with a spoon until a dough forms.

Put the dough into a parchment-lined container, spread it out into corners and edges and press down firmly until you have an even and smooth surface. Place in the fridge for a few hours, preferably overnight. Cut into cubes.
