Vegan Fried Rice


I’ve been making this vegan fried rice at least twice a week recently (and we still can’t get enough of it) so I thought I would share the recipe with you. It’s very quick & simple and so satisfying! ️
(Serves 2) 

Ingredients:

2 servings of rice

100g firm tofu

100g button mushrooms

1/2 cup green peas

1/2 cup chopped spring onion

1 minced clove of garlic

1 tbsp sesame oil 

Sauce:

1 tbsp sesame oil

1 tbsp sweet chilli sauce

1 tbsp peanut butter

2 tbsp maple syrup

1 cm grated ginger

1 minced clove of garlic

2-3 tbsp tamari sauce 

Method:

Combine all the ingredients for the sauce in a large bowl and mix and whisk thoroughly. Cut the mushrooms into halves or quarters (depending on their size) and add to the sauce. Press the tofu out of excess water, cut it into small, bite-sized pieces and add to the sauce. Mix all the ingredients so that they are covered in sauce and leave for at least half an hour. 

Cook the rice according to the instructions on the pack. 

In a large pot or wok, heat the oil. Add the minced garlic, spring onion and peas. Fry for 4-5 minutes, stirring every now and then. Next, add the tofu and mushrooms together with the sauce and cook for another few minutes stirring occasionally. Add the cooked rice, mix everything carefully and fry for a few minutes. 

Sprinkle with the sesame seeds and chilli flakes.
