Spinach Soup with Smoked Tofu and Chives

If you’re not the biggest fan of spinach, this recipe for the spinach soup will win you over! The soup is wonderfully creamy, rich, nutritious, and delicious. It’s also easy to put together and can be ready in about 40 minutes, making it an ideal light lunch or a great starter for dinner. It tastes great served with a chunky slice of sourdough bread or on its own.

Spinach Soup witch Smoked Tofu and Chives

Ingredients
  

  • 300 g spinach
  • 400 g potatoes peeled and cut into small chunks
  • 200 g smoked firm tofu drained and cut into small bite sized cubes
  • 200 ml plant-based yoghurt
  • 2 vegetable stock cubes mixed with 1l of hot water
  • 1 onion peeled and chopped
  • 2 garlic cloves peelend and minced
  • 2 tbsp lemon juice
  • 1 tbsp rapeseed oil
  • Handful of chives finely chopped
  • Salt and pepper

Instructions
 

  • Place a large pot over a medium heat and add a drizzle of rapeseed oil. Once warm, add the onion, garlic and a pinch of salt. Mix well and cook for about 5 minutes, until soft.
  • Next, add the spinach and potatoes. Pour in the stock water and bring to a boil. Reduce the heat and simmer for 15-20 minutes.
  • Add the yoghurt and lemon juice and blend until smooth. Season with salt and pepper to taste, add the tofu cubes, then reheat gently. Serve with a handful of chopped chives.
