Spinach Soup witch Smoked Tofu and Chives
Easy to put together spinach soup with a wonderfully creamy texture and rich flavour.

- 300 g spinach
- 400 g potatoes peeled and cut into small chunks
- 200 g smoked firm tofu drained and cut into small bite sized cubes
- 200 ml plant-based yoghurt
- 2 vegetable stock cubes mixed with 1l of hot water
- 1 onion peeled and chopped
- 2 garlic cloves peelend and minced
- 2 tbsp lemon juice
- 1 tbsp rapeseed oil
- Handful of chives finely chopped
- Salt and pepper
Place a large pot over a medium heat and add a drizzle of rapeseed oil. Once warm, add the onion, garlic and a pinch of salt. Mix well and cook for about 5 minutes, until soft.
Next, add the spinach and potatoes. Pour in the stock water and bring to a boil. Reduce the heat and simmer for 15-20 minutes.
Add the yoghurt and lemon juice and blend until smooth. Season with salt and pepper to taste, add the tofu cubes, then reheat gently. Serve with a handful of chopped chives.
