Vegan Tahini Chocolate Chip Blondies
These blondies are a delicious and healthy alternative to traditional blondies. They are made with tahini that adds a nutty flavour and ripe bananas for a moist and chewy texture.

- 120 g plain flour
- 40 g cornflour
- 60 g light brown sugar
- 2 ripe bananas smashed
- 100 g tahini
- 2 tbsp olive oil extra virgin
- 60 ml plant-based milk
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- A pinch of salt
- 120 g vegan chocolate chips
Preheat oven to 190°C / gas mark 5. Grease and line an 8x8 inch baking pan.
In a large bowl, whisk together the flour, cornflour, brown sugar, baking powder, and salt.
In a separate bowl, whisk together the tahini, olive oil, mashed bananas, plant-based milk, and vanilla extract.
Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix. Stir in the chocolate chips.
Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the centre comes out clean.
Let the blondies cool completely before cutting into squares and serving.
