Caramelised Onion White Bean Dip

Delicious, creamy and full of flavour dip great with tortilla chips, vegetable sticks, pita or fresh bread.

Ingredients
  

  • 1 can butter beans
  • 1 onion peeled and sliced
  • 60 ml rapeseed oil + extra 1tbs for caramelizing the onion
  • 1 tbsp rice vinegar
  • 1 tsp coconut sugar
  • 1 tbsp lemon juice
  • 2-3 tbsp water
  • Salt and pepper

Instructions
 

  • Place a pan over a medium heat, add a tablespoon of rapeseed oil and allow to heat. Add the sliced onion and a pinch of salt. Cook for 10 minutes until the onions are soft. At this point, add the coconut sugar and rice vinegar. Continue to cook the onions for a further 10 minutes until golden and caramelized.
  • In a large bowl, place the caramelised onion, butter beans. Add the lemon juice, rapeseed oil and 2-3 tablespoons of water and blend with a hand blender. I like to leave a little texture but it's up to you if you prefer it completely smooth.
  • Add salt and pepper to taste.
