60mlrapeseed oil+ extra 1tbs for caramelizing the onion
1tbsprice vinegar
1tspcoconut sugar
1tbsplemon juice
2-3tbspwater

Instructions
Place a pan over a medium heat, add a tablespoon of rapeseed oil and allow to heat. Add the sliced onion and a pinch of salt. Cook for 10 minutes until the onions are soft. At this point, add the coconut sugar and rice vinegar. Continue to cook the onions for a further 10 minutes until golden and caramelized.
In a large bowl, place the caramelised onion, butter beans. Add the lemon juice, rapeseed oil and 2-3 tablespoons of water and blend with a hand blender. I like to leave a little texture but it's up to you if you prefer it completely smooth.
