I am a big fan of butter beans and I love incorporating them in different recipes, from salads and pastas to spreads and dips. There are so many recipes with the white beans that I cannot wait to share with you but this one, although super simple and easy, is definitely one of my ultimate favourites. It is delicious, creamy and full of flavour. It tastes great on sourdough bread, with tortilla chips, pita or vegetable sticks. The caramelised onion adds to the recipe plenty of flavour, rapeseed oil adds richness, and the white beans blend into smooth and creamy perfection. I think I need to warn you here, it is addictive, and you might not be able to stop snacking on it!
Caramelised Onion White Bean Dip
Ingredients
- 1 can butter beans
- 1 onion peeled and sliced
- 60 ml rapeseed oil + extra 1tbs for caramelizing the onion
- 1 tbsp rice vinegar
- 1 tsp coconut sugar
- 1 tbsp lemon juice
- 2-3 tbsp water
- Salt and pepper
Instructions
- Place a pan over a medium heat, add a tablespoon of rapeseed oil and allow to heat. Add the sliced onion and a pinch of salt. Cook for 10 minutes until the onions are soft. At this point, add the coconut sugar and rice vinegar. Continue to cook the onions for a further 10 minutes until golden and caramelized.
- In a large bowl, place the caramelised onion, butter beans. Add the lemon juice, rapeseed oil and 2-3 tablespoons of water and blend with a hand blender. I like to leave a little texture but it's up to you if you prefer it completely smooth.
- Add salt and pepper to taste.
