Tahini Chocolate Chip Blondies

Vegan Tahini Chocolate Chip Blondies

These blondies are a delicious and healthy alternative to traditional blondies. They are made with tahini that adds a nutty flavour and ripe bananas for a moist and chewy texture.

Ingredients
  

  • 120 g plain flour
  • 40 g cornflour
  • 60 g light brown sugar
  • 2 ripe bananas smashed
  • 100 g tahini
  • 2 tbsp olive oil extra virgin
  • 60 ml plant-based milk
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • A pinch of salt
  • 120 g vegan chocolate chips

Instructions
 

  • Preheat oven to 190°C / gas mark 5. Grease and line an 8×8 inch baking pan.
  • In a large bowl, whisk together the flour, cornflour, brown sugar, baking powder, and salt.
  • In a separate bowl, whisk together the tahini, olive oil, mashed bananas, plant-based milk, and vanilla extract.
  • Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix. Stir in the chocolate chips.
  • Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the centre comes out clean.
  • Let the blondies cool completely before cutting into squares and serving.
