Vegan Tahini Chocolate Chip Blondies
These blondies are a delicious and healthy alternative to traditional blondies. They are made with tahini that adds a nutty flavour and ripe bananas for a moist and chewy texture.
Ingredients
- 120 g plain flour
- 40 g cornflour
- 60 g light brown sugar
- 2 ripe bananas smashed
- 100 g tahini
- 2 tbsp olive oil extra virgin
- 60 ml plant-based milk
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- A pinch of salt
- 120 g vegan chocolate chips
Instructions
- Preheat oven to 190°C / gas mark 5. Grease and line an 8×8 inch baking pan.
- In a large bowl, whisk together the flour, cornflour, brown sugar, baking powder, and salt.
- In a separate bowl, whisk together the tahini, olive oil, mashed bananas, plant-based milk, and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix. Stir in the chocolate chips.
- Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the centre comes out clean.
- Let the blondies cool completely before cutting into squares and serving.
