We’ve been obsessed with figs in our house lately. My children love them with their porridge while I have been incorporating them into different salads. This recipe is so simple yet so satisfying, full of flavour and filling up.
(serves 2-3)
Ingredients:
70g rocket salad
4 figs
280g smoked tofu
A handful of walnuts
For the Dressing:
1 tbsp apple cider vinegar
2 tbsp olive oil
2 tsp maple syrup
1 tsp Dijon mustard
Salt and pepper
Method:
Prepare the dressing by combining all the ingredients in a small bowl. Cut the tofu into small cubes and slice the figs. Using a pestle and mortar, crush the walnuts. Place the rocket salad, tofu, figs and walnuts in a big bowl, add the dressing and toss to coat. Salt and pepper to taste.
